BIEN-ETRE MAISON’s seasonal parfait puts ripe fruit in season at the centre, pairing it with 2 varieties of gelato, herbs and spices. The recipe changes monthly. There is also a drink set designed to accompany each month’s parfait, for those who want to enjoy the combination of dessert and drink as well as the parfait on its own.
One visitor described a seasonal parfait layered with strawberries and the fragrance of cherry blossoms, citrus tang, and the savoury notes of sake lees and Japanese pepper, followed by the gentle bitterness of butterbur shoots. They found that its character shifted with each bite. Another visitor enjoyed the refreshing acidity, rosemary aroma and the way chocolate and ice cream came together in a different seasonal version. The ingredients change from month to month, making the parfait a chance to try a combination specific to the season.
